Black Bean & Corn Salad

I am posting this recipe in hopes of encouraging summer to finally come to CA. The past few days have been somewhat sunny but pretty cold and windy. And apparently we have rain on the way? What? It is the end of May for cryin’ out loud!!

This is one of my all time favorite summer salads. I first got this recipe, or a version of it, from my mother-in-law, but have done some tweaking to it because as you know, I love to tweak recipes. It can go with burgers, salmon, grilled chicken, shrimp… you name it. So in effort to lure Mr. Summer to my house, I am posting this yummy recipe. I am desperate to get my usual warm sunny weather back that I will do anything. I mean I just had to make another pot of my Potato Leek Soup !!! Which by the way is VERY delicious. But have no fear, this Black Bean and Corn Salad is on the menu for this week to lure over Mr. Summer. It’s gotta work right? We are having it with Trader Joe’s Chile Lime Chicken Burgers:

These babies are delicious. If you haven’t tried them, you really should.

Black Bean & Corn Salad

1 can black beans, drained and rinsed

1 ½ cups corn (I use the Trader Joe’s Organic Frozen Sweet Corn BUT fresh in the summer when I can get it)

¼ cup chopped green onions (I use the white and green parts)

1 small garlic clove, minced

1 cup grape tomatoes cut in half

2 jalapeno peppers, chopped

1 ½ Tbls finely chopped cilantro + whole leaves to decorate (I always end up adding more b/c I have a cilantro addiction)

Salt/pepper to taste
Dressing:

2 Tbls white wine

1 ½ Tbls lime juice

2 Tbls olive oil

1 Tbls Dijon mustard

*If I am making this for a crowd, I double and triple this recipe! It is so good leftover too!*
