I must say I am enjoying myself here at my parents house. I have gotten over my solo flight (sort-of) and am finally relaxing with all of the help from my parents. I do miss my husband… A LOT, but we will be home before we know it!
One of the best things about staying with mom, besides her fab-u-lous cooking, are her delicious cocktails! And because I don’t want to rub it in too much that they live in Hawaii, I am not posting a “tropical”cocktail. However, this cocktail is just as good as the Mai Tais, Tropical Itches, and Frederico’s that I have also been indulging in.
Recipe of the week this time around: My Mama’s Summer Vodka Cocktail. It is so yummy and easy! She has many names for it: Cheap Cosmo, Vodka Cranberry… but I am just calling it My Mama’s Summer Vodka Cocktail because it is the perfect light and refreshing drink for the summer!
My Mama’s Summer Vodka Cocktail
juice of 1 lime (or about 1 oz fresh lime juice)
1 packet Splenda
2 oz. water
1 shot (2 oz) of vodka
2 oz. cranberry juice.
Mix altogether (or shake in shaker) and pour over ice.
That is it! It is delicious! I didn’t take a pretty picture of it because I was too busy drinking it. The other great thing about this drink- you can double, triple, etc… the recipe for a crowd! Or just double it for yourself (especially if you have had a really long day with the kids).
