Taco Salad

I love tacos.

I love salads.

One of my favorite salads is the Taco Salad.

It is delicious, nutritious, and goes great with a margarita. I mean who doesn’t love a great meal that goes with a margarita?

I make my own *taco* meat. No, I don’t have my own turkeys out back. What I mean is, I don’t buy the traditional taco packet of seasoning. Yes, it is good but it is loaded with sodium. Plus, I just like to flavor my own food the way I like it. I also use my own seasonings in my Old School Taco Recipe as well. However, if you prefer to use the taco seasoning packets, go for it. I fully admit- they are easy.

Taco Salad

 

Taco Meat Ingredients:

1 lb. ground turkey or beef (we eat ground turkey in our house)

1/4 cup chopped onion (about 1 small onion)

2 garlic cloves, minced

2 tsp. dried cilantro

2 tsp. chili powder

2 tsp. cumin

salt/pepper to taste

Add tablespoon of extra-virgin olive oil to large saute pan and heat over medium heat. Add chopped onion and saute for about 5 minutes or until onion begins to turn translucent. Add minced garlic and cook for about 2 minutes. Turn stove down to medium-low, otherwise you might burn the garlic. Add turkey meat and break up as it cooks. When turkey meat is almost done, add all of the spices and salt/pepper. After turkey is cooked all the way through, taste for seasoning. You can always add more of any of the above spices! Set aside.

Salad Ingredients:

2-3 hearts of romaine lettuce chopped (out of the 3 pack)

1 cup purple cabbage chopped

1 cup sweet corn (I use the Trader Joe’s frozen organic sweet corn)

1 can black beans

1 avocado sliced

1-2 green onions thinly sliced

4 plum tomatoes chopped

½ English cucumber, chopped

1/4 cup chopped fresh cilantro

shredded cheese (I will never tell you how much cheese to use. Let’s just say, I use A LOT!)

salsa (This is the salad dressing. Use as little or as much as you would like!)

Directions:

In a large bowl, add chopped lettuce and cabbage. Put corn in colander and rinse with warm water to defrost. Add to bowl. Rinse black beans in same colander.

NOTE: Rinsing canned beans is an important step. First of all, you are rinsing off some nasty preservatives but they are also more easily digestible after you rinse them. I don’t know about you, but I appreciate less bean farts from family members than more.

Add black beans to bowl, followed by avocado, green onions, tomatoes, cucumber and cilantro. You can add your cooked turkey meat at any point. Finish off the salad by topping with shredded cheese and salsa. Toss the salad really well to mix all of the ingredients together. Serve and please enjoy with a margarita or a frosty beer.

  1. Welcome back! ;) Funny, we had tacos tonite! We use an organic seasoning packet which is actually really good – and organic black beans (never thought straining them would result in fewer farts, considering it’s the fiber in the beans, no?) (also, who doesn’t like a good bean fart once in awhile?) (Not to smell them, but to let one out.)

      You CRACK ME UP!!! I was referring to someone particular that has the bean fart issues! LOL! I always use organic black beans too or buy dry and soak. Which seasoning packet do you use?

    Oh, I love me a taco salad. I have one w/ doritos and avocado and YUM! But – whenever I see a recipe for one, I can’t help but think of that budweiser “real men of genius” commercial for the 5,000 calorie salad or something similar. Heh.
