Chicken, Tortellini and Spinach Soup

My husband makes fun of me because every time it starts to get cold outside (cold being between 50-60 degrees), I get all in a tizzy and get so excited about making my *Winter Meals*. Winter meals usually involve one of two things: soup or roasting. Although summer is my favorite time of year, I really do love winter meals. I am starting to think that I just like to be warm and anything that makes me warm…well, I love it!

I threw this soup together one day a few years ago when I was staring into the fridge wondering what to make for dinner. It is fast, easy and has a lot of delicious flavor! Did I mention…easy??? I need easy, healthy meals for the week nights. What mom doesn’t?

Chicken, Tortellini, & Spinach Soup

Ingredients:
1 quart (box)+ 1 can of chicken stock
1 can diced tomatoes
1 10 oz. package of fresh cheese tortellini
2-3 cups rotisserie chicken chopped/shredded
1 6 oz. bag of fresh baby spinach
1/4 cup  fresh pesto (I use the Trader Joe’s brand. You can find it near the cheese and hummus!)
salt/pepper to taste
Top with shredded Parmesan cheese

Directions:
1. Combine chicken stock, tomatoes, tortellini, chicken, and spinach in a large pot.

2. Cook on high to reduce spinach down.

3. Add pesto and mix well.

4. Boil for 10 minutes and then reduce to simmer.

5. Add salt/pepper to taste.

6. Serve in bowl and top with Parmesan cheese.

Yes, it is that easy. Did I mention fast and healthy too??

    Okay, that looks so delicious!
    I am a HUGE fan of soup, while Craig is just so-so.
    But this looks like something that might win him over!
    (Just wanted to tell you that I buy the jars of organic Better Than Bouillon chicken base at Costco. It’s like a paste and is fabulous and so much cheaper than prepared stock.)
