Every Friday night in this house is pizza night.
By the end of the week I am ready for something fast, easy and delicious.
I love experimenting with different flavor combinations for pizza and creating new favorites. Not to mention, making your own pizza costs drastically less than picking it up from your local pizza place every week.
One of favorite pizzas is my Barbecue Chicken Pizza with Crispy Shallots. It is full of flavor, savoriness, and personality!
Barbecue Chicken Pizza with Crispy Shallots
Ingredients:
1 pizza crust (I buy pizza crusts from Whole Foods)
3 shallots, thinly sliced into rings
3 Tbls olive oil
3/4 cup barbecue sauce
2 cups rotisserie chicken, chopped into bite size pieces
3/4 cup mozzarella cheese, shredded
3/4 cup gouda cheese, shredded
2 Tbls fresh cilantro leaves, torn
salt/pepper
Directions:
1. Preheat oven to 400.
2. In a small saucepan, heat olive oil over medium-high heat. Add sliced shallots and sprinkle with salt and pepper. Cook shallots, stirring occasionally until shallots are crispy, about 15 minutes. Set aside.
3. Spread 1/4 cup barbecue sauce over crust. Then top with 1/2 cup mozzarella cheese and 1/2 cup gouda cheese.
4. Mix the remaining 1/2 cup barbecue sauce with chopped chicken in a bowl. Evenly spread the chicken over the cheese on crust. Top with remaining 1/4 cup of mozzarella and 1/4 cup of gouda cheeses.
5. Bake in oven for 15 minutes or until cheese is melted and crust is crispy. Top pizza with crispy shallots and cilantro!
Suggested Wine Pairings: Zinfandel (Try Ridge Vineyards Three Valleys Zinfandel Blend), Petite Sirah, Malbec, Chenin Blanc

That looks yummy! We made pizza last night too. I use dough from WF or TJ. It makes it so easy. I’m going to try your recipe. It looks great!
If I am feeling extra adventurous, I buy the dough but usually just the Whole Foods Organic Whole Wheat pre-made crust. Any crust will do!

I love the Whole Foods crusts- so good! And they are thin crust. I am thin crust gal.
We use a nine grain from a local store, love their fresh dough.
Ian caramelizes onions and then bakes them on the pizza with blue cheese, or shrimp and pesto is a big hit too!

I do buy the crust although I do buy the dough sometimes. Never from scratch though. Who has time for that?
I need to start this habit . . . we do pizza night every Friday, but it’s always from the local place. I make my own pizza, and it’s very good, but it takes far too much time for the dough to be ready. Of course, I could buy pizza crusts & go from there, but that requires leaving the house, and if I’m leaving the house, why not just pick up a pizza.
I need to make, and freeze, crusts, ready to use.
I buy the Whole Foods crusts- 2 to a pack and pop them in the freezer. Then I just pull one out to make the pizza! Do that- then you won’t have to leave the house!
