I purchase the cooked/steamed lentils from Trader Joe’s for this super fast and healthy soup.
Quick & Healthy Lentil Soup
2 Tbls olive oil
1 small onion, diced small
2 cups carrots, diced small
1 cup celery, diced small
1 tsp cumin
1 package refrigerated steamed lentils, or 2 1/2 cups cooked lentils
4 cups vegetable broth
1 Tbsp fresh lemon juice
salt/pepper to taste
2 Tbsp fresh cilantro, chopped
Spoonful of sour cream or Greek yogurt
1. Heat olive oil in large pot over medium-high heat. Add onions and cook for 10 minutes. Add carrots and celery, cook for 10 minutes. Stir in cumin and sprinkle with salt & pepper.
2. Add lentils and vegetable broth. Bring to a boil for about 2 minutes and then lower heat.
3. Stir in lemon juice. Add salt and pepper to taste.
4. Ladle into soup bowls and top with fresh cilantro and sour cream or Greek yogurt (my favorite!). Enjoy!
