Are you staying at home this Valentine’s Day for dinner? It’s all the rage you know. The perfect dessert for a perfect evening?

Chocolate Lava Brownies

A creamy, moist and rich brownie cupcake that will have your taste buds begging for more. You won’t just be able to have one. Top each chocolate brownie mountain with whipped cream or vanilla ice cream and sprinkle with fresh raspberries for a Valentine’s treat.

Chocolate Lava Brownies

Makes 11

Ingredients:

8 ounces (1 1/3 cups) semisweet chocolate chips

3 tablespoons of butter

1 1/2 teaspoon vanilla

1/3 cup light sour cream

1/2 cup sugar

1/4 cup flour

1 tablespoon cocoa powder

1/4 teaspoon salt

3/4 cup egg substitute

1 large egg

Canola cooking spray

Extra cocoa powder for dusting

Directions:

1. Preheat oven to 375 degrees F.

2. Melt chocolate chips and butter in a 4-cup glass measuring bowl in the microwave for 2 minutes, stirring after 1st minute.

3. Stir in vanilla and sour cream.

4. Add sugar, flour, cocoa powder and salt. Blend well with hand mixer.

5. Add egg and egg substitute. Using a hand mixer, beat on high until batter is creamy and light.

6. Chill in the refrigerator for 30 minutes.

7. Spray muffin tin pan with canola spray and dust with cocoa powder. Pour batter into 11 muffin cups.

8. Bake in oven for 11 minutes and remove. The middle will cave in a little bit but trust me, the brownies are done! DO NOT over cook!

9. Serve on a plate and top with whipped cream or vanilla ice cream and raspberries! Enjoy!
